Cranberry Coconut Granola
Crunchy, satisfying, but not too sweet, this granola is easily my favorite go-to for breakfast. I eat 1/2 a cup every morning with almond milk, but it's just as good on it's own as a snack or mixed with Greek yogurt.
Cranberry Coconut Granola
Makes 16 Servings

Ingredients:
8 cups rolled oats
½ cup honey
¾ cup coconut oil
1 tsp sea salt
2 tsp vanilla extract
1 tbsp of cinnamon
¼ dried cranberries
Directions:
Preheat oven to 350
degrees. Combine honey, coconut oil,
salt, vanilla extract, and cinnamon in a small saucepan over medium heat. Stir
until the mixture melts, then foams, and then cook for 15 seconds longer. Pour over oats and mix thoroughly to coat
all the ingredients. Spread oat mixture
evenly across a baking sheet lined with parchment paper. Bake for 45min, stirring once after 15
minutes of baking. After the granola has cooled, stir in dried cranberries and
enjoy!
